Pad Thai

 


Hello friends,

     Today I will share with you the National dish of Thailand "Pad Thai". Before sharing the recipe would like to share you the story behind the dish. Hope you all will like it. During 'world war II', Thailand suffered a storage of rice due to less production in the rice fields, which coincided with bad flooding. In order to preserve the stocks of this previous grain, the Thai government (under Prime minister and Military dictator,"Plack Phibunsonghram) started to promote noodles instead amongst it's people. Noodles used only 50% of the grain, so were more economical and cheaper to produce. The government of Thailand in 1930 created the dish "Pad Thai", in a bid to protect the rice resources of the country. The campaign included changing the country's name, commissioning a new national anthem and creating a national dish "Pad Thai".

Ingredients:-

1. Rice noodles-250g.

2. Canola Oil- 3-1/2tbsp.

3. Garlic- 4 cloves (minced).

4. Yellow onion-1/2(sliced).

5. White onion- 1/2 (sliced).

6. Green onion- 2(chopped).

7. Red bell pepper-1(thinly sliced).

8. Raw Shrimp, chicken- 250g.(cut into small pieces).

9. Fresh bean sprouts-1-1/2 cup.

10. Fresh cilantro-1/2 cup (chopped).

11. Lime- 2(wedges).

12. Peanut-1 tbsp (chopped).

For Pad Thai sauce:-

1. Low sodium soy sauce- 1tbsp.

2. Light brown sugar- 5tbsp.

3. Rice vinegar-2 tbsp.

4. Fish sauce-3-1/2 tbsp.

5. Sriracha hot sauce-1-1/2 tbsp.

6. Creamy peanut butter-2-1/2tbsp.

Preparation Method:-

Step 1- Take a bowl add fish sauce,low sodium soy sauce,light brown sugar,rice vinegar, Sriracha hot sauce, creamy peanut butter. Mix well and set aside.

Step 2- Place noodles in a large bowl, pour over plenty of boiling water. Soak for 5 minutes, then drain in a colander and quickly rinse under cold water. Don't leave them sitting for more time than 5-7 minutes.

Step 3- Heat a wok on medium high flame. Add 2tbsp of oil. Add chicken pieces and cook for 2-3 minutes, now add shrimp and cook for another 1-2 minutes. Once shrimp will became pink take out chicken and shrimp and set aside.

Step 4- Now add beaten egg in the same oil which is remaining in the wok and stir vigorously to scramble the eggs. Once eggs scrambled well take out and keep with cooked shrimp and chicken.

Step 5-  Now add remaining oil in the wok. Add yellow, white onion slices, garlic mince,red bell pepper, saute. Add noodles, sauce mixture (step-1), transfer cooked shrimp, chicken and egg into the wok. Stir well. 

Step 6- Next add bean sprouts,chopped peanuts to the pan and toss everything to combine.

Step 7- Garnish with green onions, chopped peanuts, cilantro and lime wedges. Serve immediately.
