Sabudana Khichdi

 


Dear friends,

        Today I am here to share with you a healthy recipe "Sabudana Khichdi"( Tapioca pearls Khichdi). Before that would like to share a story related to the dish. In India' Khichdi' holds immense ritualistic importance in variety of Hindu festivals. It is served to a gamut of people during Durga Puja bhog and bhandaras. Khichdi is also one of the most relished delicacies during 'Makar Sankranti'. According to the book ' A historical dictionary of Indian foods' by famous historian  " K.T Acharya,  Mughal Emperor Jahangir's favourite food on his days of abstinence from meat was a very rich Gujarati Khichdi called 'lazizan' with both spices and nuts. Hope you like the information about " Khichdi". So let's start!

Ingredients:- 

1. Sagu( Tapioca pearls)- 2 cups( big pearls).

2. Yellow lentil- 1 cup.

3. Potato- 1 medium (diced).

4. Cauliflower- 1 cup(floats).

5. Carrot- 1(diced).

6. Peas- 1/2cup.

7. Raisins- 1-1/2tbsp.

8. Dry roasted peanuts- A handful.

9. Coconut- 2tbsp(grated).

10. Ginger paste- 1tsp.

11. Cumin paste- 2tsp.

12. Bay leaf- 1 (whole).

13. Green chilies- 2-3(slit).

14. Red chili powder- 1/2 tsp.

15. Turmeric powder- 1tsp.

16. Garam Masala- 1/2 tsp.

17. Cumin seeds-1tsp.

18. Salt- To taste.

19. Sugar- 1-1/2tsp.

20. Ghee- 2tbsp.

21. Mustard Oil- As required.

Preparation Method:-

Step 1- Place a pan on medium flame and dry roast sagu till light golden. Turn off flame and wash sagu thoroughly. 

Step 2- Soak Tapioca pearls in 4cupe of water.

Step 3- Now in the same pan dry roast yellow lentils till light brown. Take out and wash thoroughly. Drain water and Keep aside.

Step 4- Place the pan on medium flame. Add 2 tbsp of mustard oil. Once oil became well heated. Fry potatoes, cauliflower till golden. Take out once get the texture.

Step 5- In the same pan add 2 more tbsp of mustard oil. Once oil will became smoky hot. Add bay leaf, dry red chilies, cumin seeds. Once they start splutter add yellow lentils. Mix well. 

Step 6- Now add 2 cups of water. Once water will start boiling, reduce the flame and cover the pan with the lid. Cook the lentils completely, check occasionally if required add more water.

Step 7- Once lentils will almost 90% done add all vegetables (carrots, potatoes, peas, cauliflower) salt, sugar , turmeric powder, red chili powder, Ginger paste, cumin paste. Mix well all ingredients. Cook for 3-4 minutes.

Step 8- Next add sagu (Tapioca pearls), mix well and check salt and spice at this stage if required can add at this stage. 

Step 9- Cover the pan and cook under lower flame until sagu(Tapioca pearls) became soft.

Step 10- Once Sagu will became soft add garam Masala and ghee( clarified butter). Mix well and turn off the flame. Keep the pan covered for 5 minutes.

Step 11- After 5minutes transfer the Khichdi into a serving bowl. Garnish with roasted peanuts and grated coconut.

Step 12- Now " Sabudana Khichdi" is ready to eat with brinjal fry and papad.
