Gobi Matar (Cauliflower with Peas)

   Today I am here to share with you a simple but tasty vegan recipe for cauliflower. Winter is my favorite season as I belong to India. It's a hot region. I enjoyed cooking much in winter because; in winter I can get so many different kinds of vegetables. Cauliflower contains so many nutrients values like Fiber, Choline, Sulforaphane. Cauliflower is also a good source of Antioxidants. On the other hand, Green peas are an excellent source of protein; it also helps to Control Blood Sugar. Green peas have Antioxidants too. Regular eating of green peas may reduce the risk of cancer. Green peas contain magnesium, potassium, and calcium that helps to prevent high blood pressure. Hope; you like the information about the vegetables. So, let's start making cauliflower with green peas.



Ingredients:-

1. Cauliflower- 1 medium(florets).

2. Green Peas- 1/2 cup.

3. Potatoes- 2 medium(diced).

4. Tomato- 1 medium(diced).

Spices:-

1. Bay leaf- 1(whole).

2. Dry red chilies-2(halved).

3. Cumin seeds- 1/2tsp.

4. Coriander powder- 1tsp.

5. Kashmiri red chili powder- 1tsp.

6. Cumin powder- 1tsp.

7. Green chilies-2-3(slit).can adjust according to your taste.

8. Turmeric powder- 1-1/2tsp.

9. Salt-To taste.

10. Yogurt- 1tbsp.

11. Sugar- To taste.

12. Mustard oil- 2tbsp.

13. Ghee- 1tbsp.

14. Coriander leaves- 1tbsp(chopped) for Garnishing.

Preparation Method:-

Step 1- First take a bowl and add coriander powder, cumin powder, kashmiri red chili powder, turmeric powder, salt, sugar, Yogurt. Whisk well and mix all the spices. Add 2tbsp of water into it. Keep aside.


Step 2- Place a pan on medium flame. Add 1tbsp of mustard oil. Once oil will became hot, add cauliflower and fry till light golden brown. Once get the texture take out into a bowl and set aside.



Step 3- Now in the same pan add remaining mustard oil. Once oil heated well, add bay leaf, dry red chilies,cumin seeds. Saute for few seconds. Next add potatoes and fry them till golden. 



Step 4- Next add tomato, saute well. Add (step-1) spice mix into the pan. Cook until raw aroma goes away.


Step 5- Now add green peas. Combine all ingredients well and cook for 2-3 minutes. 



Step 6- Transfer fried cauliflower in the pan. Mix well. Add 1/2 cup of water. Lower the flame. Cover the pan with lid.



Step 7- Stir occasionally, check salt and spice. Adjust according your taste at this stage.

Step 8- Once potatoes are boiled properly, add ghee(clarified butter). Mix well. Turn off the flame.



Step 9- Cover the pan for 5 minutes. Add chopped coriander leaves.



Step 10- Now it's ready to serve with steamed rice or Roti.
