Spinach with Mixed vegetables and lentil dumplings

 


Hello Friends,

   Today I am here to share with you a healthy vegan recipe," Spinach with mixed vegetables and lentil dumplings"; winter already arrived and, I can remember very clearly when I was a kid, I suppose to hate eating vegetables. My mother was very clever because I love to watch cartoons; she always gave me an example of 'Popeye the Sailor Man' who gets his strength from spinach. As a kid, I was also starting to believe that; if I eat spinach, then I will also become as strong as Popeye. Now when I recall those days, I can understand my mother's point of view. Miss you maa(mom). I always pray to God that, in every life I want you as my mother.

Spinach has a lot of nutritional value. Spinach is good for our eyes. It has anti-inflammatory properties. Spinach reduces blood sugar, prevents heart attacks, good for our skin. It also helps to prevent cancer; it's good for our bones and so on.. okay, now let's start making Spinach.

Ingredients:-

  1. Spinach- 1 bunch.(cleaned).
  2. Potato- 1 medium(diced).
  3. Radish (tender)- 1 medium (diced).
  4. Pumpkin- 1/2 cup(diced).
  5. Cauliflower- 1/2 cup(florets).
  6. Carrot- 1 (diced).
  7. Eggplant- 1 small(diced).
  8. Lentil dumplings- 15-18.
  9. Panch phoron (five spice mixture)- 1 tsp.
  10. Ginger paste- 1/2 tsp.
  11. Turmeric powder- 1tsp.
  12. Green chilies- 2-3 (slit).
  13. Mustard oil- 3 tbsp.
  14. Salt- To taste.
  15. Sugar- To taste.
  16. Dry red chili- 1(halved).


Preparation Method:-

Step 1-  First place a pan on medium flame. Add 1-1/2 tbsp of mustard oil. Once oil will became hot, add lentil dumplings and fry them till golden brown. Transfer them once get the texture into a bowl.


Step 2- In the same pan, add remaining mustard oil. Once oil heated well, add dry chili, panch phoron. Saute for few seconds. Now add all vegetables. Fry them well.



Step 3- Next add salt, sugar , turmeric powder. Mixed well. Lower the flame. Cover the pan with lid.


Step 4- Once all the vegetables will became tender, open the lid and add ginger paste.

Step 5- Wash the spinach well under running water thoroughly. Now add spinach with the vegetables. Cover the pan. Cook for 5-6 minutes.


Step 6- After 5-6 minutes, open the lid. Mix all the ingredients well. If required then you can add little water. I didn't used water as spinach will released water itself.

Step 7- Now check salt and spice, if required can add at this stage. Next add slit green chilies and fried lentil dumplings. Mix gently.

Step 8- Cook for another 2-3 minutes. Turn off the flame.

Step 9- Now it's ready to serve with steamed Rice.
