Chinese Cuisine - "Mixed gravy Chow mein"




Hello readers,
     Today I'm going to share with you a Chinese Cuisine "Mixed gravy Chow mein". Before that would like to share few information regarding chow mein,  do you know Chinese have been feasting on noodles for approximately 2000 year since the 'Han dynasty'( 206 BC-220 AD). Chinese noodles known collectively as 'Mien'.


Ingredients:

1. Chinese egg noodles -300 - 400 gm.

2. Eggs- 3 lightly beaten with salt.

3. Boneless boiled chicken -1 cup( breast pieces).

4. Small raw prawns -1/4 cup.

5. Oyster Sauce -6 tbs.

6. Vegetable oil -3 tbs.

7. Chili oil -2 tbs.

8. Sesame oil -3 tbs.

9. Low sodium soy sauce - 3 tbs.

10. Chicken stock -5 cups.

11. Corn starch -1 1/2 tbs.

12. White pepper powder - 1/2 tsp.

13. Granulated sugar- 1 tbs.

14. Salt- To taste.



Vegetables:

1. Bell pepper (green, yellow,red) -1 cup.

2. Carrot (medium) -1/2  cut into slices.

3. Button mushroom - 2 sliced.

4. Spring onion - 1 small bunch sliced.

5. Cabbage  - 1 cup cut into 1 inch pieces.

6. Onion - 2 medium sliced.

7. Garlic - 5-6 cloves (crushed).

8. Ginger - 1 inch(julienned).

9. Green chilies -5-6 (slit).


Preparation Method:

Step 1- In a mixing bowl use a whisk to combine oyster sauce, granulated sugar, sesame oil, soy sauce and corn starch set aside.

Step 2- Place the noodles in a deep non stick pan and add chicken stock and some water, bring it to a boil. Cook over a high heat flame for 2 minutes. Now lower heat and cook for 4-5 more minutes until the noodles almost cooked. Strain the noodles and reserve the stock.

Step 3- Heat a wok over high heat and add 1 tbs vegetable oil, now add beaten eggs and stair vigorously to break apart, take out them and set aside.

Step 4- Return the wok to the heat add remaining vegetable oil, now add onion, garlic, ginger, spring onion and mix them well.

Step 5- Add boiled chicken, raw prawns, salt cook them for 2 minutes, now add all vegetables one after another (do not over cook vegetables). Add sesame oil, white pepper powder, salt and toss them to mix all ingredients properly.

Step 6- Add fried eggs and toss one more time. Now add noodles to this mixture and stair fry for a minute.

Step 7- Add the reserve stock and stair well. Now mix (step-1) stirring frequently over medium heat for a couple of minutes until sauce thickens.

Step 8- Drizzle the chili oil and garnish with spring onion and slit green chilies. Serve hot.

Punjabi Delicacy-'Pindi Chana'

    Dear Friends,      Today, I am here to share with you a famous Punjabi delicacy Pindi Chana. It is believed that this dish was originated from Rawalpindi. The present-day this place is in Pakistan. One unconfirmed story related to his dish is said, Anuj Wadhwa, the grandson of 'Kasturi Lal Wadhwa'; says that his grandfather was about 20yrs old when he ran away from Pakistan during partition.
