Pasta Alla Norma

 


Hello friends,

     Today I will share with you an Italian recipe "Pasta Alla Norma". This recipe invented in Sicilian city of Catania in the 19th century. The dish is said to be named in honor of "La Norma", the famous opera composed by Vincenzo Bellini in 1831. According to legend, while he was working on the opera, Bellini frequented a local restaurant in Catania,where he would always order the same pasta dish.

As an homage to the Catania-born composer,the restaurant owner decided to name the dish after his opera, suggesting the greatness of "Pasta Alla Norma" by comparing it to "Bellini's" masterpiece.

Ingredients:-

1. Egg plant(aubergines)- 2medium.

2. Extra virgin olive oil-1/2cup.

3. Garlic-3 cloves (chopped).

4. Tomato- 2-3 large (roughly chopped).

5. Red chili flakes-1tsp.

6. Whole wheat long spaghetti-455g.

7. Ricotaa salsa- 135g.(grated)

8. Fresh basil -1/2 bunch(thinly sliced).

9. Dried oregano-1tsp.

10. Red wine vinegar-1tbsp.

11. Mint leaves-1tsp.(chopped).

12. Kosher Salt- To taste.

13. Pepper -As required.

14. Red bell pepper flakes-1/2 tsp.

Preparation Method:-

Step 1- Take a large pot. Add sufficient water. Once water start boiling add speghetti and cook for 8-10 minutes or as per packet instructions (do not overcooked). Drain water and set aside.

Step 2- First cut eggplants into 1/2 inch thick round slices and season with salt. Keep aside for 10 minutes. After 10 minutes pat the eggplant slices with paper towels.

Step 3- Place a pan on medium heat. Add half portion of oil. Once oil became hot, fry the eggplant slices for 2 minutes from both the sides or until browned.

Step 4- Take out fried eggplant pieces on a plate. Set aside to cool.

Step 5- Once fried egg plant slices became cool cut them into bite size pieces.

Step 6- Now heat remaining oil in the same pan. Once oil heated well, add garlic saute till light brown.

Step 7- Next add chopped tomatoes, red chili flakes, red bell pepper chili flakes, red wine vinegar,oregano,salt, pepper. Cook until saucy.

Step 8- Now add spaghetti, fried eggplant pieces. Toss to combine well.

Step 9- Next add ricotta salsa, fresh mint, fresh basil leaves. Give a nice toss to mix all ingredients well.

Step 10- Transfer into a serving bowl. Serve hot immediately.
